Which is why we’ve developed a recipe for one of the world’s favourite crowd-pleasers: Tacos! Not only is our recipe low-carb and wonderfully keto-friendly, but it's also super easy to make using our NGB Pancake & Waffle Mix! Our recipe makes 6 of these flavoursome Mexican delights, so they’re perfect for a lunch to share with your loved ones!
Ingredients:
Tortillas
1 1/4 Cup (150 g) Pancake & Waffle Mix + extra for rolling
1/2 Cup (120 ml) Milk
1 Egg
Filling
1 Tbsp vegetable oil
1 Small onion, chopped
1 Clove garlic, minced
1 Tsp smoked paprika
1 Tsp dried oregano
1/2 Tsp chilli powder, or more to taste
1 Tsp onion powder
1 Tsp cumin powder
450 g ground beef or vegan alternative
Salt & black pepper to taste
1 Avocado, sliced
Chopped parsley
Lime wedges for serving
Sauce
1/4 Cup (60 g) yogurt
1/2 Avocado
1 Clove garlic, minced
1/4 Cup chopped parsley
Instructions:
1. To make the tortillas mix all ingredients for the dough. Lightly flour a working surface with the Pancake & Waffle mix. Form a ball then roll and cut circles, They have to be about 1/3 cm thick.
2. Grease a frying pan over medium heat and cook the tortillas on both sides for about 2 minutes per side. Place the ready tortillas on a plate, cover with plastic bag and set aside.
3. To make the filling, heat the oil in a large frying pan. Add onion and cook for 5 minutes, until translucent. Add garlic and cook for 30 seconds. Add smoked paprika, oregano, chilli powder, onion powder and cumin. Cook for 1 more minute stirring frequently.
