Guide to making Keto Pancakes & Waffles

Our Pancake and Waffle Mix is such a treat for the whole family to enjoy. In this blog we will be going through the recipes for making delicious keto-friendly pancakes and waffles.

How to make pancakes with No Guilt Bakes Pancake Mix

This recipe is inspired by traditional American pancakes so you can make your own perfect thick and fluffy delicious pancakes or waffles with just the right amount of sweetness.  

Making our keto and paleo pancakes is quick and easy but results may vary depending on which ingredients you add to the mix. (i.e. almond milk or water as well as eggs or an egg replacer such as aquafaba) We recommend you add Almond milk to this mix. 

This recipe typically makes 3-4 pancakes.


Ingredients / Tools




Measuring No Guilt Bakes' Pancake Mix
  1. Measure 36g of the mix (3 tablespoons) into a medium bowl that you will use to let your pancake mix sit in.
  2. In a separate bowl whisk 60ml of almond milk and 1 egg until the mixture is smooth. 
  3. Once smooth add the milk and egg mixture to the medium bowl and whisk again for 1 minute until the batter is smooth once again.

4. Place the mixture on the side and let it set. 
  • It is important to let your pancake mix rest for better results. You want to avoid overmixing your pancake batter so resting allows time for the flour to hydrate and it allows the milk (or water) time to soften the flour and dissolve any remaining lumps, preventing chewy pancakes.
5. Let the mix rest for at least 10 minutes. In the meantime preheat your frying pan and add a small amount of oil or butter to the pan and swish it around the sides to prevent the mixture from sticking.



How to fry pancakes from No Guilt Bakes' Pancake Mix

6. Pour two tablespoons of the batter into a non-stick frying pan. (A ladle spoon works perfectly if you want to achieve that perfect round pancake shape).

7. Leave the mix to cook in the pan until you see bubbles appearing on top of the pancake, then flip and cook on the other side for 1 minute.

8. Repeat for any remaining batter and your pancakes are ready to plate up!

How to make keto waffles with No Guilt Bakes' Waffle Mix

Perhaps you’re more of a waffle person, someone that enjoys experimenting with sweet and savoury and gains happiness from filling those little square pockets with generous mouthfuls of flavour? Well you can use the same Baking Mix to make keto-friendly waffles too! 

Let the waffling begin!


Ingredients / Tools

  • 36g (3 heaped tbsp) of No Guilt Bakes Pancake and Waffle Mix.
  • 45ml of preferred milk or water.
  • 1 egg or egg replacement (e.g.Aquafaba).
  • 1 tbsp butter or cooking oil.
  • 1 Non-stick small or medium frying pan.



1. Whisk together your milk/water, butter and egg in a bowl until smooth.
2. Add 36g of our mix (3 heaped tablespoons) and whisk again thoroughly.
3. Leave your batter to rest for 10 minutes. 
  •  Just as we mentioned earlier, this resting period is essential for a smooth batter and fluffy, soft results.
4. Meanwhile, heat up your waffle maker.



5. Pour your batter into your waffle maker.
6. Leave to cook for roughly 3-4 minutes depending on your waffle maker. They should look crisp from the outside and golden-brown all over.  
7. Remove from the waffle maker - your waffles are all cooked and ready to eat.

Keto-friendly waffles using No Guilt Bakes Waffle Mix

Indulge in your waffles with plenty of berries, keto-friendly maple syrup and the perfect mug ofhot chocolate! You can even opt for the savoury route by serving your waffles piled high with chicken or even bacon!

You can even use ourcocoa powder to make your pancakes or waffles chocolate flavoured! Simply whisk in about one tbsp of cocoa powder into your dry mixture, and you’ve got yourself some extra decadent, yet equally keto-friendly, waffles!
