Ingredients:
- 3 Large Eggs
- 240g Sour Cream
- 2 Tsp vanilla extract
- 1 Tsp orange extract, optional
- 4 Tbsp Erythritol
- 230g Almond flour
- 1/4 Tsp salt
- 1/2 Tsp baking soda
- 80g Milk Chocolate Chips
Instructions:
- Preheat oven to 160 C. Prepare 12 silicone muffin cups.
- In a medium bowl, whisk together the eggs, sour cream, vanilla, orange extract and erythritol.
- Mix in the almond flour, salt and baking soda. whisking until the batter is smooth and free of lumps.
- Add the chocolate chips and mix again.
- Pour the batter into the silicone muffin cups,
- Bake For 20-25 minutes, until a toothpick inserted in the middle of a muffin comes out clean and muffins are golden.
- Cool on a wire rack, then remove from the silicone cups. Use a spoon to remove them easily.
